Bayfield’s path to the top was built on more than just proximity. After earning a Bachelor of Commerce and a Master of Applied Finance from Macquarie University, he cut his teeth in management at the Dee Why Hotel and The Newport Arms. These roles taught him that leadership is rarely static; he learned early on that employees respond to varied management styles, necessitating a constant, respectful adaptation of his own approach. Mentorship played a decisive role, particularly through his father and chef Carlo Campana, who instilled in him a rigorous discipline regarding stock control and operational preparation.
Since stepping into the CEO role in 2025 following a decade as COO, Bayfield has steered the group through a massive shift in industry standards. The company, which now includes the Belrose Hotel, various liquor superstores, and digital platforms, has pivoted from the era of suburban nightclubs toward premium, dining-led experiences. Behind the scenes, this transition has required moving from local newspaper advertising to complex digital ecosystems and cloud-based operations. While the weight of total responsibility is significant, Bayfield maintains his focus by relying on the foundations laid by his family over nearly 50 years.
